Sometimes I get really tired of the usual weekend fare around here. Bagels, french toast, waffles, pancakes and eggs a million different ways. Now don’t get me wrong. I think all of the above is delicious but I just wanted something weird and wonderful for breakfast today.I sent my husband a text to pick up some cool ingredients among the standard supermarket items that appear on a weekly basis.

Then I get a text back this morning that went like this…..”are you awake? I need you to call me, I’m at Lingo’s”. He was clearly typing fast, because the store’s name is actually LONGO’S not LINGOS. I’m not sure what he was talking about but it may have not been a LINGO that was familiar to me.
Even before I called him, I had a feeling that there would be an issue with the LIST. I know what you are thinking. I should appreciate the fact that he DOES the grocery shopping. I DO. You see, he likes to shop for various reasons. One in particular is, he buys what we need versus me who buys what we don’t need but is really PURDY to shoot.
He also could not locate the red currants but asked a staff person there and guess what? They miraculously had some IN THE BACK.I bet there were yellow tomatoes IN THE BACK too but I don’t believe that came up in conversation with the lingo longo guy.
AND….isn’t everything always IN THE BACK?
THAT IS WHERE all the goods are always kept before they make it TO THE FRONT.
It would be a heckuva lot easier to just shop in the back and not in the front. Right?
Anyways, here’s my toast to the weekend. It literally took me 3 minutes to throw together and it was delish.AND just as a side-note, after breakfast was made, shot, eaten and done…..in walked my husband with a yellow tomato in his hand ……from our garden.Why didn’t I just look in the back?
- 4 slices of 12 grain bread, toasted
- ½ avocado, smashed
- 1 red plum
- 2 eggs, hard boiled and sliced
- goat cheese
- red currants
- red onion - for garnish
- fresh basil leaves - for garnish
- spread two slices of toast with smashed avocado.
- sprinkle goat cheese on remaining two slices of toast
- top with sliced hard boiled eggs, blueberries, currants and sliced plum and fresh basil leaves
- optional garnish - sliced red onion - I hate it but my husband loves it so I give him mine.
