Vegan Belgian Waffles

I feel like long weekends are the perfect excuse to make something special for brunch. Take a look at what we had today. SO GOOD ! These waffles have really, really, really amazing flavour. This is first time I tried this recipe and I think I’m going to make a bunch to have on hand in the freezer.

They’re so good on their own, you don’t really need much pomp and circumstance to up their tastiness. Just a drizzle of maple syrup, a dollop of your favourite yogurt and a few fresh berries is all you need.

So what’s so good about these waffles?

You don’t have to be vegan to enjoy them. I’m going to bet that anyone who tastes these are not going to complain that they are made without dairy and eggs. They are fairly dense and filling so you might only need one to satisfy your appetite.

When I first discovered making recipes with oat flour, there was no turning back. It’s super easy to make your own just by whirling around quick oats in a food processor until it becomes a fine flour. I use this in so many recipes now. From muffins to meatballs to waffles. Oat flour is a perfect way to get away from processed white flour.

Quick tips on making the perfect waffles.

Make your waffles with the right waffle maker. It will guarantee perfect waffles every time.

Make sure to generously spray your preheated waffle maker and pour about 1/2 cup of batter onto the waffle maker per waffle. You need to respray the waffle maker with each addition of waffle batter. Trust me on this one. I had the last waffle STICK because I forgot to spray again.

Cook the waffles until your waffle maker indicates they are ready (usually with a green light) and gently remove.

These waffles freeze beautifully. To reheat, simple pop them in the toaster until warmed through and crispy. I always love having waffles in the freezer!

Super quick to make. One Bowl. All you need in a waffle. BOOM.

Vegan Belgian Waffles

Ingredients
  • 3 cups coarsely ground oat flour
  • 3 tablespoons coconut sugar or cane sugar
  • 1 tablespoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon arrowroot starch, tapioca or cornstarch
  • 3 tablespoons ground flaxseed *mixed with ½ cup water, set for 5 minutes
  • 1⅓ cup dairy free milk *mixed with 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cooking oil for waffle machine
  • Toppings of choice: berries, coconut cream, chocolate chips, nut or seed butter
Instructions
  1. In a large bowl, whisk together the flour, coconut sugar, baking powder, cinnamon and arrowroot together.
  2. Add in the ground flaxseed mixture, dairy free milk mixture, and vanilla extract. Mix until there are no more clumps of flour.
  3. Heat the waffle machine and brush the cooking oil onto the waffle machine. Let the oil sit there for a minute to heat.
  4. Prepare the waffles according to your waffle machine. I recommend using ½ cup-2/3 cup batter per waffle.
  5. Gently remove the waffle from the machine and serve with desired toppings.
