Pomegranate Crunch Superfood Slawlad
Serves: 6
  • 2 cups green cabbage, shredded
  • ½ cup purple cabbage, shredded
  • 1 cup fresh kale, chopped
  • ½ cup carrots, finely shredded
  • 1 cup brussel sprouts, thinly sliced (use a mandolin)
  • 2 cups lettuce greens, chopped
  • ½ cup dried cranberries
  • 1 can mandarin oranges, drained and rinsed
  • ¼ cup toasted flax seeds
  • Pomegranate Honey Dressing (recipe below)
  1. Place all ingredients in a large serving bowl. Drizzle with dressing and place in fridge for 2 or 3 hours to chill. The dressing will soften the slawad. Serve as a main or a side.
