Raspberry Popovers

Ingredients
  • 2 large eggs, at room temperature
  • 1 cup whole milk, at room temperature
  • 1 cup flour
  • ½ teaspoon salt
  • 1½ tablespoons unsalted butter, melted
  • fresh raspberries, rinsed and dried
  • granulated sugar for serving
Instructions
  1. In a blender, combine the eggs, milk, flour and salt. Blend on low speed until just combined, about 20 seconds. Add the remaining melted butter and blend for another 10 seconds.
  2. Set it aside for at least 30 minutes to one hour at room temperature. This is KEY.
  3. When you're ready to bake, position a rack in the lower third of the oven. Preheat the oven to 450 degrees F. Grease a standard 6 cup popover pan with a ½ tablespoon of the melted butter. Make sure to coat it well. Once the oven is preheated put the popover pan in for 10 minutes.
  4. Divide the batter evenly among the prepared pan, filling each mold ½ way. Place a few raspberries into each popover well.
  5. Transfer to the oven and bake for 20 minutes. DO NOT OPEN THE OVEN DURING THE BAKING PROCESS OR YOU WILL END UP WITH FLOPOVERS.
  6. After 20 minutes, lower the oven temperature to 350F and continue to bake until puffed, golden and crisp, about another 15 to 20 minutes.
  7. Using a knife, carefully run the knife around the sides of each popover to release. Serve warm sprinkled with powdered or granulated sugar and enjoy.
