Mocha Whipped Cream

Ingredients
  • 2 tablespoons good quality dark chocolate
  • 1 tablespoon hot water
  • 1 teaspoon espresso or instant coffee powder
  • 1 cup whipping cream (very cold)
  • ½ tsp vanilla extract
  • 1 tablespoon granulated white sugar
  • Stand mixer bowl & whisk beater, chilled
Instructions
  1. In a double boiler, melt the chocolate until shiny and smooth.
  2. Stir together the hot water and instant espresso or coffee granules. Stir into melted chocolate until smooth and allow to cool to room temperature.
  3. Whip cream, vanilla and sugar until it just begins to form soft peaks.
  4. With the mixer on low, add the chocolate/coffee mixture to the bowl. Whip on high until you reach your desired consistency.
