Roasted Pink Applesauce

Ingredients
  • 3 pounds (1400g) about 6 -8 Ontario Ambrosia apples, peeled
  • juice and zest of ½ a lemon
  • juice and zest of 1 large orange
  • 2 teaspoons (10g) pure maple syrup
  • 2 tablespoons (28g) unsalted butter, I used this vegan butter
  • 1 teaspoon (5g) ground cinnamon
  • ¼ teaspoon (1.40g) ground nutmeg
  • a pinch of kosher salt
  • 6 oz. (170g) fresh raspberries
Instructions
  1. Preheat oven to 350F.
  2. Place the zest and juice of the orange and lemon in an ovenproof casserole dish (I used a deep oval dish but I would suggest an 11" x 7"...the mixture will be piled high but will shrink as it bakes)
  3. Quarter and core the apples and add them to the dish, tossing them with the juices as you go. This will ensure that the apples don't get brown (Ambrosia Apples don't brown quickly so you don't have to worry!)
  4. Add the maple syrup, butter, cinnamon, nutmeg, salt and raspberries. Cover and bake for 1 to 1¼ hours, until the apples are very soft. Stir vigorously with a wire whisk or mash to achieve the desired consistency. The applesauce still have some texture depending on how much you stir or mash it. Serve warm with a scoop of ice cream and a sprinkle of crunchy spiced apple granola (recipe below).
