Crunchy Spiced Apple Granola

  • 3 cups old-fashioned rolled oats, I used gluten free
  • 1 cup nuts, roughly chopped, I used a mix of almonds, cashews & walnuts
  • ½ cup sunflower seeds
  • ¼ cup flax seeds
  • ½ cup apple juice, squeeze the juice from two grated apples
  • ¼ cup coconut oil
  • ½ cup pure maple syrup
  • ½ teaspoon cinnamon
  • ½ teaspoon apple pie spice
  • ¼ teaspoon sea salt
Instructions
  1. Preheat the oven to 325F and line a cookie sheet with parchment paper and set aside.
  2. In a large bowl, stir together the oatmeal, nuts, sunflower seeds and flax seeds.
  3. In a small saucepan over low heat, combine the apple juice, coconut oil, maple syrup, cinnamon, apple pie spice and salt until coconut oil is melted.
  4. Pour the apple juice mixture over the oat mixture and stir until well coated.
  5. Spread the oatmeal mixture in a single layer on the sheet pan. Bake for 45 minutes, stirring the granola every 15 minutes to ensure even baking.
  6. Cool the granola to room temperature. Granola will become crunchier as it cools. Store in an airtight container for up to one week.
