Brown Butter Sage and Sweet Apple Grilled Cheese Sandwich

Ingredients
  • BROWN BUTTER CRISPY SAGE LEAVES
  • 4 tablespoons unsalted butter
  • 8 -10 sage leaves
  • GRILLED CHEESE
  • 2 tablespoons softened butter
  • 4 thick slices of any rustic whole grain or sourdough bread
  • ½ cup shredded oka cheese
  • ½ cup shredded fruilano cheese
  • 1 cup shredded parmesan cheese
  • ½ of an ambrosia apple, thinly sliced
Instructions
  1. BROWN BUTTER CRIPSY SAGE LEAVES
  2. Add the butter to a small saucepan over medium low flame.
  3. As soon as the butter starts to foam up add the sage leaves, (make sure they are dry) and cook for about 5 minutes.
  4. The butter will foam up and start turning brown. Do not touch it, and do not stir.
  5. The moment the foam subsides remove from heat. The sage should be crispy by now.
  6. Preheat oven to 400F.
  7. Assemble the sandwiches by lightly buttering the outside of each slice of bread. Divide the oka and fruilano cheeses on two of the unbuttered sides of the bread. Top with the apple slices and sprinkle with some crispy sage leaves. Place the unbuttered side of the bread onto the cheese and apple mixture. Now you have two sandwiches with buttered sides on the outside. This will ensure that the parmesan cheese sticks to it before you cook the sandwiches. Sprinkle the parmesan cheese liberal over both sides of the sandwich. Place your skillet on a medium low flame and heat until warm but not super hot. Put the sandwiches into the skillet, you should hear it sizzle. Place the skillet directly into the oven and bake for 5 - 6 minutes. You are going to flip the sandwiches over and bake them again for another 5 - 6 minutes or until the outside is nice, browned and crispy. Enjoy!
