Wildwood & Waffles Brunch

Ingredients
  • 1½ cups (375 mL) all-purpose flour
  • 1 tbsp (15 mL) granulated sugar
  • 2 tsp (10 mL) baking powder
  • ½ tsp (2 mL) baking soda
  • ¼ tsp (1 mL) salt
  • 1 large egg
  • 1 cup (250 mL) Ontario buttermilk
  • 3 tbsp (45 mL) unsalted Ontario butter, melted
  • ½ cup (125 mL) chopped Ontario thinly sliced country ham
  • ½ cup (125 mL) shredded Wildwood cheese
  • Cooking spray
  • Ontario maple syrup, for drizzling (optional)
Instructions
  1. Preheat oven to 300°F (150°C).
  2. Heat waffle iron according to manufacturer’s instructions.
  3. Meanwhile, in a large bowl, whisk together flour, sugar, baking powder, baking soda and salt.
  4. In another bowl, whisk egg and whisk in buttermilk and butter. Pour into flour mixture and stir to combine. Stir in ham and cheese.
  5. Spray waffle iron with cooking spray. Ladle about ½ cup (125 mL) of the batter into waffle iron and close lid. Cook for about 3 minutes or until golden brown. Place on baking sheet and keep warm in oven. Repeat with remaining batter. (For smaller waffles, use ¼ cup (60 mL) of the batter in waffle iron. Drizzle with maple syrup and serve with your favourite brunch foods.
