Superfood Salad with Greek Yogurt Tahini Dressing

Ingredients
  • Small head of broccoli, chopped finely
  • 3 stalks of celery, diced
  • 1 cucumber, diced
  • 4 cups baby kale, finely diced (tip: massage your kale leaves with a bit of oil to ensure they are tender and not bitter)
  • 1 green apple, diced
  • 3 tablespoons sunflower seeds
  • 2 tablespoons dried cranberries
  • DRESSING:
  • ½ cup yogurt (Greek or coconut)
  • Juice from ½ lemon
  • Pinch of sea salt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon tahini
  • Whisk well or shake well in a mason jar.
  • Add all salad ingredients to a large bowl and drizzle with dressing. Toss again. Let sit for at at least one hour in the fridge. The longer the better.
