4 cups baby kale, finely diced (tip: massage your kale leaves with a bit of oil to ensure they are tender and not bitter)
1 green apple, diced
3 tablespoons sunflower seeds
2 tablespoons dried cranberries
DRESSING:
½ cup yogurt (Greek or coconut)
Juice from ½ lemon
Pinch of sea salt
2 tablespoons honey or maple syrup
1 teaspoon apple cider vinegar
1 tablespoon tahini
Whisk well or shake well in a mason jar.
Add all salad ingredients to a large bowl and drizzle with dressing. Toss again. Let sit for at at least one hour in the fridge. The longer the better.
