Airfryer Salmon Bite Bowls

Ingredients
  • 2 salmon filets, pat dry and cubed
  • 4 tablespoons light soy sauce
  • 2 teaspoons sesame oil
  • 1 teaspoon hot chili oil,
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • For the rice bowls
  • 2 cups cooked rice
  • Mix of raw veggies, I used spiralized, cucumber, carrots etc.
  • ½ cup cooked edamame
  • ½ avocado optional
  • spicy mayo optional
Instructions
  1. Place the salmon cubes in a small bowl and add the mixture of soy sauce, hot chili oil, sesame oil, honey, garlic powder, and sea salt.
  2. Gently toss the salmon in the marinade mixture and allow the salmon to marinate for at least one hour in the fridge to soak up the liquid.
  3. Spray air fryer basket with any neutral oil. I use avocado oil.
  4. Pat the salmon cubes dry with paper towel before placing the in the bottom of an air fryer basket, leaving space in between each one.
  5. Save the leftover marinade so you can drizzle it over the cooked salmon later but I suggest bringing it to boil in a small pot on the stove.
  6. Cook the salmon at 400 F for 7 minutes in the air fryer. The edges of each cube will get crispy and the teriyaki sauce will caramelize if you switch to the broiler feature for 3 minutes. If your air fryer doesn't have the broil feature just pop them into the oven on BROIL to crisp them up.
  7. Assemble bowls and serve.
