Belgian Waffles with Blueberry Infused Maple Syrup
 
 
Serves: 4
Ingredients
  • 1¾ cups flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1¾ cups milk
  • 2 large eggs
  • ½ cup melted butter
  • 1 teaspoon vanilla extract
  • Blueberry Infused Maple Syrup
  • 1 cup fresh blueberries,
  • ½ cup real maple syrup
  • Blueberry Greek Yogurt, optional garnish but super delish
Instructions
  1. Whisk the flour, baking powder and salt together in a medium bowl.
  2. In another bowl, beat the milk, eggs, melted butter and vanilla extract.
  3. Pour the milk mixture over the dry mixture and stir with a fork until just combined.
  4. Let sit five minutes to allow the baking powder to activate.
  5. While you're waiting heat up your waffle iron.
  6. Pour, or ladle, enough batter to cover about ⅔ of the surface, it will spread so don't overload the batter.
  7. My waffles are usually done in 4 minutes, if you have a waffle iron that has a red button on it and signals that they are ready, I'm a little jealous.
  8. Continue making your waffles until all the batter is used up. Serve warm with blueberry maple syrup.
  9. To make the syrup - you are not going to believe how easy this is....
  10. Place blueberries and maple syrup in a small saucepan. Cook over medium high heat, continue to stir until berries are mushy and syrup is thickened. Strain through a seive and serve over waffles with additional fresh berries and yogurt.
