Mixed Organic Greens with Fig, Clementine & Feta Cheese
Serves: 2-4
  • 1 bag/box of organic mixed greens
  • 2 clementines, peeled and sliced
  • 2 figs, washed and sliced
  • 3 small radishes, sliced
  • ¼ cup of fresh feta cheese
  • 2 tablespoons dried blueberries, currants or cranberries for garnish - optional
  • Honey Balsamic Dressing
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or agave
  • 1 teaspoon good quality Dijon mustard
  • ¼ cup extra-virgin olive oil
  • Coarse salt and ground pepper
  • pinch of ground ginger
  1. Place salad ingredients in a bowl.
  2. Place dressing ingredients in a jar or small bowl. I like to use a jar because you can shake it and pour it easily onto the salad.
  3. Dress salad with honey balsamic dressing, garnish with dried fruit, toss and serve.
