Mini Garlic Croissants with Avocado & Greens

Serves: 4-6
- 12 mini croissants, split in half
- 3 - 4 tablespoons extra virgin olive oil
- 1 garlic clove, minced
- 2 teaspoons freshly chopped parsley (or dried is fine too)
- ½ teaspoon kosher salt
- 2 avocados, peeled and cut into small chunks
- 1 cup mache greens (you can use any type of greens, spinach, kale etc.)
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground pepper
- 3 tablespoons hummus, homemade or storebought
- 1 tablespoon plain yogurt
- Diced red onion, sliced almonds, pea shoots for garnish - optional
- Preheat oven to 500F - Broil Mode
- Take sliced croissants and place them on a baking sheet.
- Mix next 4 ingredients in a small bowl and brush croissants with olive oil mixture.
- Place avocado, greens, salt, pepper, hummus and yogurt in a blender or food processor.
- Pulse a few times just to blend. You want this to be chunky and not liquid in consistency.
- Place croissants under broiler for a minute or two just to get brown and crispy.
- Top with avocado mixture, garnish and serve immediately.
