Greek Yogurt, Blackberry & Fresh Herb Dressing

- 1 cup fresh blackberries
- ½ cup white balsamic vinegar
- ½ cup avocado oil (can use any dressing oil if you don't have avocado)
- ½ cup zero fat plain Greek Yogurt
- 2 tablespoons pure maple syrup
- ½ teaspoon sea salt
- 1 tablespoon each fresh thyme & tarragon, finely chopped
- Blend your blackberries, balsamic vinegar, oil, yogurt, maple syrup and sea salt. Puree well until all the ingredients are combined.
- Pour mixture through a fine sieve to extract the blackberry seeds.
- Whisk in fresh thyme and tarragon then chill dressing until ready to serve over salad. Makes about 2½ cups.
