#HappyValentinesDay to all my favourite Brunettes, Redheads and BLONDIES ! These are my take on the most delicious and easy #valentinesday treats ever. White Chocolate Lemon #Blondies with Moscato Raspberry Buttercream 💕💕💕recipe below 👇🏻

3/4 cup unsalted butter, melted
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 extra eggs at room temperature
2 teaspoons vanilla extract
Zest from one lemon, divided
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon pink Himalayan sea salt
1 1/2 cups white chocolate, cut into small chunks
Preheat your oven to 350F (180C). Line an 8 x 8 inch baking dish or tin with parchment paper and set aside.
Melt the butter in the microwave for 25-30 seconds.
In a medium bowl whisk together the melted butter and brown sugar.
Make sure that the mixture cools a bit, then stir in the egg, vanilla and half the lemon zest.
Using a spatula, mix in the flour, baking powder and sea salt. Once the batter is evenly combined fold in the white chocolate chunks. Do not over mix.
Transfer the batter into your lined tin, and bake for approximately 30 minutes, until the top is golden brown.
Allow the blondies to completely cool then frost.
LOVE AT “FROST” SIGHT Moscato Raspberry Buttercream
1 cup fresh raspberries
Remaining lemon zest (half the lemon)
1/4 cup moscato wine (or any bubbly)
1 cup unsalted butter, room temperature
2 cups powdered sugar

Place raspberries and moscato wine in a small saucepan over medium heat. Bring to a boil, then reduce to medium low heat and continue cooking until reduced, 5-6 minutes. Pass the mixture through a sieve and cool completely.
Beat butter on high speed until light and fluffy. Mix in cooled raspberry reduction. Gradually add powdered sugar, beating at low speed until smooth. 💕
