Let’s make #banana #peanutbutter #chocolatechip #muffins with Chef Livi today!

1 cup mashed ripe bananas (about 3 medium ripe bananas)
¾ cup natural creamy nut butter
2 extra large eggs
¼ cup pure maple syrup
2 teaspoons vanilla extract
1/2 tablespoon dairy free milk
1 cup oat flour
1 teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon sea salt
⅓ cup chocolate chips plus a few more for the tops.
Preheat oven to 350 degrees Line a 12-cup muffin liner with muffin liners or spray the inside with nonstick cooking spray to prevent muffins from sticking.
In a large bowl, mix together the mashed bananas, nut butter, eggs, maple syrup, vanilla extract and milk of choice until smooth.
Next stir in the oat flour, baking powder, cinnamon and salt until smooth. Fold in the chocolate chips. Evenly divide batter into muffin tin cavities. Top with more chocolate chips. Bake 20-25 minutes until toothpick comes out clean. Transfer muffins to wire rack to cool and enjoy! Makes 10- 12 muffins.

Another #passover hit - Flourless Dark Chocolate Chip Brownie Cookies

* 200g 7oz (dark or semi sweet chocolate)
* 3 tablespoons unsalted butter
* 2 extra large eggs at room temperature
* ⅔ cup packed brown sugar
* ¼ tsp sea salt
1 heaping teaspoon instant coffee mixed with a splash of hot water.
* 3 tbsp potato starch or cornstarch if it isn’t Passover
* 2 tbsp cocoa powder
* ½ tsp baking powder
* ½ cup dark chocolate chips

* Preheat your oven to 350°F. Line a large baking pan with parchment paper.
* Combine chocolate and butter in a heat-safe bowl and melt in the microwave in short bursts with frequent stirring until completely melted, smooth and glossy. 
* Place eggs, sugar and salt in a medium bowl and beat for 3-5 minutes until pale and very thick using an electric hand mixer or using the whisk attachment of a stand mixer. Mix in the coffee mixture. Mix in warm chocolate mixture until evenly blended.  
* Sift together potato starch, cocoa and baking powder in a small bowl and blend well. Stir it into the chocolate mixture. Stir in chocolate chips. Cover and refrigerate for 30-45 minutes until the dough is firm but not hard..  
* Scoop up about 1 1/2 tablespoons of the batter onto prepared baking sheets. Bake for 10- 12 minutes until shiny and crackled on top and set around the edges. Transfer baking sheet to a cooling rack and let cookies cool completely on trays. Sprinkle with flaked salt if desired.

I bake these #macaroons every year at #Passover (mostly for ME) recipe from @marthastewart

A super simple recipe with an added twist on the #chocolate dip.

Salted Caramel Chocolate #Macaroons

¾ cup sugar
2 ½ cups shredded unsweetened coconut
3 x large egg whites
1 teaspoon pure vanilla extract
Pinch of salt
100gm bar chocolate salted caramel
Preheat oven to 325 degrees. Line a baking sheet with parchment paper.
In a large bowl, combine sugar, coconut, 3 egg whites, vanilla, and salt. Using your hands, mix well, completely combining ingredients.
Use a small ice cream scoop or 2 tablespoons to form mounds; place on prepared baking sheet, spacing about 1 inch apart.
Bake until golden brown, rotating halfway through, 16 to 17 minutes. Let cool on a wire rack.
Once cool, chop the chocolate bar and melt in a double boiler or in microwave until smooth and glossy. Dip each macaroon into the chocolate and drizzle if desired. Place on parchment paper and cool until chocolate sets.

Here’s how:

One Pot Veggie & Pesto Mac n cheese

* 1 (500g) package of small shaped pasta - I used fiorfiore lumaconi
* 2 cups chopped broccoli (raw or frozen)
* 4 1/2 cups water
* 1 1/4 cups milk (2% or whole)
* 1/2 cup plain Greek yogurt
* 2 cups shredded marble or cheddar cheese
* 1/2 cup freshly grated Parmigiano- Regianno cheese
* 1 teaspoon garlic powder
* 1/4 teaspoon grated nutmeg
* 1 teaspoon sweet paprika
* 1/4 teaspoon cayenne pepper
* 2 tablespoons salted butter
* 2 heaping tablespoons tomato pesto
* 1 large handful of baby spinach
* Sea salt and black pepper to taste

In a large pot, bring 4 1/2 cups of water to a boil over high heat with 1 heaping teaspoon of sea salt. Add in the pasta, and broccoli.

Cook & stir over medium high heat for 8 -9 minutes. The water will start to absorb into the pasta. Stir in the milk, yogurt and continue cooking until the pasta is al dente, about 5 minutes.

Add the two cheeses, garlic powder, nutmeg, paprika, cayenne, salted butter, tomato pesto, spinach and stir until creamy. Remove from the heat. Season with salt and pepper to taste. Feel free to add a bit more milk if the sauce starts to thicken too much. Best if served from stovetop to table asap. Enjoy!

A healthy snack that I could literally eat all day. #GLUTENFREE #DAIRYFREE AND SUPER MOIST Sweet Potato Bars for the yum factor.

Here’s how:

2 1/4 cups cooked & mashed sweet potatoes (about 2 large potatoes)
3/4 cup creamy cashew or almond nut butter 3 tbsp pure maple syrup 1/3 cup almond flour 2 large eggs (sub in flax eggs for vegan) 1 tsp baking soda 1 tsp real vanilla extract
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cinnamon
Toppings: 1/4 cup chopped pecans
1/4 cup chopped walnuts  1/4 cup mini semi sweet chocolate chips

First, preheat oven to 350 F  Place all ingredients (except your toppings) in food processor or blender. Blend on high for 15 to 20 seconds or until smooth and creamy.
Line an 8 inch by 8 inch pan with parchment paper.
Spread batter into lined pan. Sprinkle with pecans, walnuts and chocolate chips.  Bake for 27 - 35 minutes or until a toothpick inserted comes out clean. I baked mine for almost 38 minutes because my ovens are stupid.  
Once baked, remove from oven, cool for 15 minutes then place the pan into the fridge for 2 hours until fully cooled. Slice and serve. These are super moist and gooey.

Here’s how :
The wings- 8 drums + 8 flats (16 pieces in total) - dried well with paper towel
The coating :
* 1/2 teaspoon white pepper
* 1 teaspoon garlic powder
* 1 teaspoon sweet paprika
* 1 tablespoon brown sugar
* 1/2 teaspoon sea salt
* 1 tablespoon light soy sauce
* 1 teaspoon red curry paste
* 1/2 teaspoon cayenne pepper
* Sticky Hot Honey sauce
* 2 tablespoons unsalted butter
* 2 teaspoons minced garlic
* 2 tablespoons honey
* 2 tablespoons Mikes hot honey
Instructions
1. In a mixing bowl, add seasonings and paste. Mix well. Then add chicken, toss to coat and cover. Leave it in the fridge for at least 2 hours.
2. Arrange the wings in the air fryer, cook for 20 mins at 400F.
3. Flip all the wings. Cook for another 10 mins until they’re brown & crispy.
4. While wings are air frying for the last few minutes, Heat a frying pan over medium heat, melt the butter then add in garlic. Stir until fragrant about 20 seconds.
5. Stir in honey and hot honey Combine and remove from heat.
6. Remove wings and place in a moving bowl. Pour the hot honey sauce over the chicken and toss well. Garnish with fresh parsley if desired. Serve hot and enjoy!

2 ingredient bagels are my favourite to make and have in hand for a high protein low fat treat. They are super easy to make and I doubled the recipe because I wanted 8 bagels instead of 4 !

Here’s the recipe for 8
3 cups self rising flour
2 cups plain Greek yogurt

Egg wash - 1 egg beaten with one tablespoon milk
Preheat oven to 375F and line a baking sheet with parchment paper

Mix together the flour and yogurt. Turn dough out onto a board. Knead for a about 2 minutes. Divide dough half. Then divide into 4 equal pieces. Roll each piece into a 5-6 long log and shape into a bagel - making sure to pinch the ends together. Brush with a egg wash, sprinkle with desired toppings and bake for 25 minutes. Enjoy!

One PAN 15 minute Peanut Thai Noodles. You can’t get easier and more delish than this. @lotusfoods brown rice & millet ramen are my fave to use in this recipe. Enjoy!

* 1 tbsp olive or grapeseed oil
* 1 garlic clove , minced + 1 tsp minced ginger
* 454g package ground chicken, beef or turkey
* 1 tsp curry powder
* 1 1/2 tbsp red curry paste, divided
* 1 tsp light soy sauce
* 1 1/2 cups organic chicken broth
* 3/4 cup full fat coconut milk
* 2 tbsp rice wine vinegar
* 3 tbsp organic peanut butter
* 2 tablespoons sweet chili sauce
* 2 - 3 instant ramen noodles
* 2 large handfuls baby spinach
To serve:
* 2 tbsp peanuts , finely chopped
* Heat oil in a medium skillet over high heat Add garlic + ginger and cook for 20 seconds until it turns golden.
* Add chicken and cook for 2 minutes, breaking it up as you go, until it the meat is no longer pink.
* Add 1 tbsp red curry paste, curry powder and soy sauce. Cook for 1 minute.
* Make a space in the middle of the pan, add remaining 1/2 tbsp curry paste, stir the curry paste for 30 seconds.
* Add chicken broth and bring to a simmer then reduce to medium-high. Simmer for 1 minute.
* Nestle in the ramen noodle blocks pushing chicken aside so the noodles are submerged into the liquid.  
* Let them cook for 45 seconds, then flip noodles. Leave for another 30 seconds, then separate the noodles with 2 spoons or forks.  
* Push noodles aside, add coconut milk, peanut butter, vinegar and sweet chili sauce, then give it a quick mix to mostly dissolve the peanut butter. 
* Add spinach, toss with the noodles for 30 seconds until wilted.
Serve immediately and garnish with crushed peanuts if desired

2 frozen bananas
¼ cup rolled oats
2 tablespoons raw peanut butter (or any nut butter)
2 tablespoons maple syrup
¾ teaspoon vanilla or almond extract
1 ¼ cups plant based milk
2 scoops vanilla protein powder of choice

Blend and serve topped with crushed peanuts, hemp seed and a drizzle of peanut butter.

Steve wanted a #chocolate cream #pie so I made him one.

Recipe:

1 x 9 inch deep dish pie crust blind baked and cooled
For the chocolate pudding:
1/2 cup (95g) granulated sugar
4 tablespoons (31g) all-purpose flour
1 tablespoon (7g) cocoa powder
3 1/2 cups (828ml) whole milk
12 ounces (340 g) dark chocolate, chopped
1 tablespoon (14g) butter
1 teaspoon (5g) pure vanilla extract
For the whipped cream
1 1/2 cups (355ml) heavy whipping cream
3/4 cup (98g) powdered sugar

Instructions
1. Prepare your favorite 9-inch pie crust and blind bake it. Cool completely.
For the chocolate pudding:
In a medium saucepan, combine the flour, sugar, and cocoa powder and whisk together. Heat for 2 minutes on medium to medium-low heat, whisking constantly.

Next, slowly whisk in the milk,

Continue whisking the pudding until it starts to thicken and lightly bubble, this will take about 10-15 minutes.
Gradually add the chopped chocolate and continue whisking until the chocolate is completely incorporated. Cook for 2-3 minutes, ensuring the pudding is bubbling and thick, stirring occasionally.
Remove the pudding from the heat and whisk in the vanilla extract and butter and whisk until the butter is melted nicely into the mixture. Strain the pudding through a fine sieve once.
Pour the pudding into a heat proof bowl and cover with clear plastic wrap directly onto the surface of the pudding and poke a few holes in the plastic wrap with a toothpick.
Allow the pudding to cool on the counter for at least 1 hour before pouring into the cooled pie crust.
Once you pour the pudding into your crust place into fridge for 2-4 hours until the pudding has set completely.

When ready to serve, prepare the whipped cream.

Place the mixing bowl and whisk attachment in the freezer for 5 to 10 minutes to chill. Pour the heavy whipping cream into the chilled bowl and use an electric mixer to beat the heavy cream on medium-high speed until soft peaks start to form. Slowly add the powdered sugar and continue beating on high speed until stiff peaks form. Top the pie and garnish as desired.

Grain free Cocoa Puffs

1/ 2 cup no sugar added organic nut butter
1 tablespoon melted coconut oil
1/4 cup maple syrup
1 flax egg* (1 tablespoon ground flaxseed mixed with 3 tablespoons water - let sit 5 minutes to thicken)
1/4 cup cacao powder
1/3 cup coconut flour

Preheat oven to 350° and line a baking sheet with parchement paper.  
In a large bowl, combine the nut butter, coconut oil, maple syrup, and flax egg. Mix well. Add in the cacao powder and coconut flour and mix until fully combined and dough is formed.  
Roll into 1 teaspoon size balls, making about 50 total. Place on the baking sheet. 
Bake 11 minutes, remove and flip them all over and bake anohter 11 minutes. Cool and serve.

Ingredients
* 1 1/2 cups oat flour (150g)
* 3 teaspoons baking powder
* 1 cup unsweetened almond milk
* 1 egg (or flax egg for #vegan)
* 1/4 cup pure maple syrup
* 2 teaspoons pure vanilla
* 2 - 3 sliced bananas

Instructions
1. In a large bowl combine the flour and baking powder.
2. In another bowl beat the egg with the maple syrup, almond milk, and vanilla extract until smooth.
4. Pour the wet mixture into the dry mixture and mix until completely smooth using a spoon or an electric mixer.
5. Slice bananas
6. Lightly grease a large pan or griddle with your choice of olive, coconut oil or butter and heat to medium-high heat.
7. Using a fork, quickly dip each banana slice into the batter and place onto the pan/griddle and cook until bubbles begin to appear, then flip and cook another 1-2 minutes on the other side until lightly browned.
8. Serve warm pancakes with fruit, maple syrup, or any other toppings you like.
