Superfood Salad with Greek Yogurt Tahini Dressing
I think it’s been a while (LIKE 6 MONTHS!) since I have shared a blogpost with you. That could only mean one of two things – I’m too busy OR I’m very busy.
My life has been a bit crazy lately but that doesn’t stop me from making delicious recipes and sharing them with you on my instagram feed, stories and NOW reels!
It seriously has been a challenging two years for all of us and we may be seeing the light at the end of the tunnel. Or one can only hope!
I have been working from home, which I LOVE doing and trying to stick with healthy options for my quick lunches.
This particular salad is one that I’m totally obsessed with. It’s super easy to make, keeps well in the fridge and actually tastes better the longer it swims in the delicious salad dressing.
Lately, I’ve been focusing on healthy superfood salad recipes. What exactly is a superfood? Foods with health benefits resulting from an exceptional nutrient density. And this superfood salad is full of high-quality, nutrient-dense foods that are filling and taste amazing!You may ask……What does nutrient dense mean? Food that is high in nutrients but relatively low in calories. Nutrient-dense foods contain vitamins, minerals, complex carbohydrates, lean protein, and healthy fats. WIN WIN.
Without further adieu, I present to you the ultimate healthy salad. Enjoy!
- Small head of broccoli, chopped finely
- 3 stalks of celery, diced
- 1 cucumber, diced
- 4 cups baby kale, finely diced (tip: massage your kale leaves with a bit of oil to ensure they are tender and not bitter)
- 1 green apple, diced
- 3 tablespoons sunflower seeds
- 2 tablespoons dried cranberries
- DRESSING:
- ½ cup yogurt (Greek or coconut)
- Juice from ½ lemon
- Pinch of sea salt
- 2 tablespoons honey or maple syrup
- 1 teaspoon apple cider vinegar
- 1 tablespoon tahini
- Whisk well or shake well in a mason jar.
- Add all salad ingredients to a large bowl and drizzle with dressing. Toss again. Let sit for at at least one hour in the fridge. The longer the better.
